Trail mix protein cookies! YUM! I’ve been seeing lots of protein cookie recipes on Pinterest and I’ve been wanting to try them… Haven’t you? My first reason? It’s a cookie. Just because it’s a cookie. YUM. But seriously, I’ll give you three great reasons that you really NEED to have this recipe around your house at all times.

This Protein Cookie is Versatile!
First, as you may know, I have two busy boys and they need a lot of protein to keep them fueled and on the move! If you have kids, you know that they can get HANGRY quickly! Sometimes it seems as if they’re hungry before they even know what hit them. So you’ll need something quick for them. NO prep time! They run in from outside or down from upstairs with a friend and you’ll do a super quick hand off of this nugget of deliciousness. It’s like being the super quick pit crew for a famous NASCAR driver!

Second, I love having something quick to grab for myself (myself, go figure…) on those days when I’m racing everywhere and haven’t had a chance to have a snack or breakfast. This trail mix protein cookie recipe is delicious, portable, and can provide me with the nutrition I need to keep me out of the mid-day slump. This trail mix protein cookie is also the perfect snack before or after a workout.
And, lastly, many times I just need something to hold me over until dinner because I missed lunch in all the chaos. One or two of these cookies can serve as a terrific meal replacement!
Why You Need this Protein Cookie Recipe In Your House!
So let’s talk hard core important stuff. How do these AH. MAY. ZING. trail mix protein cookies taste? I’ve told you why we NEED these around the house – now I’ll tell you why you’ll WANT them around your house! They taste amazing! They have a moist cake-like texture. They are thick and moist and all good and melty in your mouth.
I’ve tried recipes with protein powder that, frankly, need a lot of added sugar to make them even remotely palatable. This time, I made these fabulous cookies with Young Living Vanilla Spice Protein. They contain no processed sugar and EVERYONE in my house LOVED these cookies. (I made a nut free version for my older son with nut allergies…) This protein fits right in with all that I want for me and my family – it’s an high quality protein made from rice protein, pea protein, chia seeds, quinoa, and amaranth.
Since Young Living is really discerning about what goes into their protein, it was easy for me to make these trail mix protein cookies soy free, raw, vegan, gluten free, GMO free, and with no added sugar. Anyone not lovin’ me right about now?
Trail Mix Protein Cookies Recipe
So here’s the recipe for these AH. MAY. ZING. Trail Mix Protein Cookies!
This is the ultimate high protein breakfast or snack cookie that everyone in your family will love!
- 3 1/2 c quick cook oats
- 1 1/2 c Sunwarrior Vanilla Protein Powder
- 1 c powdered milk, I used goat milk, but you can also use cow milk
- 1/2 finely ground flax seed
- 1 1/2 T cinnamon
- 1 t baking powder
- 1 t baking soda
- 3/4 c apple juice
- 10 dates
- 12 apricots
- 1 c apple sauce
- 2 T coconut oil
- 3 T vanilla
- 2 c of your favorite trail mix, Mine included cranberries, pumpkin seeds, cashews, and gogi berries
- Preheat oven to 350 degrees.
- If you have a convection oven, it works really well - you'll want to use the convection feature. But if you do, reduce the oven temperature to 325 degrees.
- In a large bowl, mix the dry ingredients until they are well combined. Mix the oats, Sunwarrior vanilla protein powder, powdered milk, flax, cinnamon, baking powder and baking soda.
- Finely chop the dates and the apricots.
- Heat the apple juice to almost boiling. Add the dates and apricots to the heated apple juice. Turn off the heat and allow the dried fruit to reconstitute. Add the coconut oil to the warm mixture.
- Once the fruit/apple juice mixture has cooled slightly, mix the wet ingredients into the dry ingredients. The mixture will be thick and sticky.
- Stir in your favorite trail mix.
- Form cookies by hand - mine were about 2" across.
- I use a Sil Pat non-stick silicone baking mat on an air bake cookie sheet for the best results.
- Place cookies in the preheated oven and bake for 10 minutes. (If you aren't using a convection feature, you'll want to add 2-5 minutes to the cooking time.)

A few final tips: Trail mix protein cookies freeze really well, so you can double the batch and save some. But make sure you keep plenty on hand…they’ll go quickly!
